Burgers with bacon tonight - success

Burgers on the menu tonight. I have been wanting to grind my own chuck with bacon mixed in, but my wife came home with 90% ground beef, so plan B. I finely chopped 2-3 oz of bacon and mixed into the meat along with a good dose of cracked black pepper. Made the patties fairly large and thin so that the bacon would cook. Cooked on a hot fire on the small with the CI grate, they were great! I meant to save the 3rd patty for lunch tomorrow, but caved in and cleaned up the leftover.

I am not sure there is a standard ratio. I did about 8 to 1. If I were grinding it all together (which I will do next time), I would probably do 80% beef and 20% bacon. I do think it would be important to keep the burger thin as you do want the bacon to cook thoroughly.

Very nice! I have been meaning to try this as well. I meant to do this last week but I forgot the bacon at the store!
Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
My wife does that with ground meat all of the time...buys the 90-93% eben when I ask for the 80/20 because she thinks it is 'healthier'. Unbeknownst to her I then add in a fat in (bacon, butter, cheese) to keep moisture in the meat. She always loves the finished product and raves about how 'juicy' it is. I gave up on the bacon thing and started adding in smoked sausage.
Double course grind into the raw beef.
Comes out good and I don't have to cook it well done because of the bacon.
