Costco Brisket flat BGE & SV - sorry no pics.

SWMBO wanted brisket for folks on Sunday night, but my only available cook time was Saturday. I didn't have time to order a whole packer online, so I picked up a 8lb flat from Costco (all they had). I was worried about drying out a flat, especially if I had to reheat for Sunday night. So, on Saturday, I smoked (oak & hickory), at 240 degrees for approximately 8 hours. Internal temp was 170 degrees. I removed and cut flat in half, and put each half in a vacuum seal bag and sous vide for 20 hours at 150 degrees until Sunday night. It was awesome: Nice bark, but juicy throughout. Had a nice tug but melted in your mouth. Was completely low stress way to cook a flat. Sorry about no pics..
