Foil and drip pan for me.Living the good life smoking and joking

Drip pan here so areas outside the pan can look mighty fine even if not in the direct line of "fire".Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Drip pan(s) on anything with a lot of fat (pork butt), or just a piece of foil on something like a brisket. I often put water, beer, apple juice and/or cider vinegar in the drip pans to help keep the fat drippings from smoking when they hit the metal. I hate that bitter burned grease taste, so if it's not lean, it has a drip pan w/ liquid.
