    My best briskets have been off my kettle. I use the snake method and never have to add fuel. I do two rows stacked two high of briquettes and then a single layer on top with wood chips. This was my last brisket.

    Weber kettles have been my go-to cookers for the past 30 years prior to getting my BGE. I still intend to use mine.  

    They're versatile and you can't beat the price.

    I forgot to add I light about 8 coals and put at the start of the snake. That holy cow rub might be fav brisket rub as I f late. That stuff is good and not sure if its the rub or everything goes good in my cook but every time I use that rub I get the best smoke rings.
