First time on XL, Ribs

Ok folks, fired up the new XL today for very first cook.  Filled up entire fire box i would say 85% full.  Spreads out three big apple wood chunks, some dusting of hickory wood chips and two of the cool dry burning wood blocks.  Used two of the weber white lighter cubes and had her open for first ten minutes while she burned.  At 200, maybe a bit too early, I started playing with the bottom vent and daisy wheel.  I cooked all day with about 3 fingers width open bottom vent.  The guy who sold it to me said 2-3 fingers width works on XL.  I'm learning so far that the daisy wheel is best for minor adjustments of 10-30 degrees.  Can open it fully, open partly, or close and just spin wheel so some petals are open.  I would say I had it on 250-260 for 5 hours so far.  

Did the ribs with dry rub, then mustard, then more rub.  I went crazy this week and got the Adjustable Rig/Woo2/Combo with two oval racks 16x20.  Today I am using the BGE XL grate and one of the ovals on 2nd highest rack level.  At 2.5 hours, I rotated top and bottom racks and flipped meat side down.  probably should have done that earlier.  Also sprayed 50/50 apple juice/apple cider every hour.  At 4 hours, took  1 1/2 racks and put in tin foil.  Then left other 2 racks open for final hour.  Still on but loving how they look.
