Need Some Assistance

Okay, I've got a Stainless Paella Pan, and the itch to try making a Seafood Paella - only issue I have is my wife is allergic to onion.  I've got some ideas on alternate recipes to omit onions, but I'm wanting to get some input from folks here before I go to the grocery store.

    Is it just onion, or anything related to onion?  Could scallion or shallot work?

    Terrible thing to be allergic to.   You can just omit the onions.

    every thing that tastes like onion,leeks, chives, ramps etc i believe is in the onion family. grated carrot adds a depth of flavor, never tried this but maybe grated radish in a reduced amount. theres no need for onion in seafood paella. isnt garlic in the onion family, you might need to drop that as well

    I still don't believe your wife.       They (ur wife & your sister in law)   were weaned AT the Varsity.

    @swordsmnUm, the closing of airways and hives would tend to suggest otherwise, plus there is family in the Elliott line that have the same allergy.

    @fishlessman - Thankfully, she is not allergic to garlic, although we do watch her closely.  Her onion-allergy has gotten worse over the 10 years we've been together, and garlic is in that same family of allergens.

    Yea, I was looking to add celery, carrots, and chopped red bell peppers to help flesh out the dish.

    My wife hates onions, doesn't matter how small I chop them up she still finds them and picks them out.  She would love this allergy to make me stop using them completely...  I'd say you're on the right track with celery, carrots and red bell peppers.
