Fire roasted Green Chile - South Western cuisine suggestions?

Curious if any of you South Westerners out there have any recommendations / recipes using Green Chile's for summer time munchies. I have a case of the 505 Fire Roasted Green Chili's (from Hatch Valley New Mexico) that I use in the winter months for Green Chili stew and enchilada's.....was wondering if you had any summer dishes that you prepare with these great morsels of flavor? I don't need to move them from the pantry, just looking for some ideas I can leverage into my summer cooks!
