Mother's day meal

I have 4 mothers coming to Château E' Smyrl tomorrow. My wife, my mom, my sister in law and the mother of my god daughter. Feeding 12 total. Mom requested a beef rib roast (prime rib...but really choice). This bad boy started out at 12 lbs. After removing the ribs and the fat cap and tieing her up it ended up at 7 lbs. I'm using the amazing ribs technique and can't wait. Also serving twice baked potatoes (pioneer woman) grilled zucchini and squash and peach cobbler. Love you mom!!!

    If you're referring to Mrs. O'Leary's Cow Crust, you're in for a serious treat. That's the best prime rib I've ever eaten. Good luck and be sure to post up some finished pics.

    Thanks. Cows crust and the overall technique. The trimming. The reverse sear etc. I've done many rib roasts cause it's a family fav but never trimmed liked this. I'm really looking forward to this one. Plan to pull at 115 or 120 and sear to 140ish. Most of the ladies like medium. I like rare. Dad likes well done. His slice will go back on the egg for a few.

    Finished pics below. This thing finished way early. Cooked between 275 and 300 and was done in less than 2 hrs. I was expecting 3.5 or 4 hrs given that it was 4 inches thick. So I skipped the sear stage. It was awesome none the less just not the crust I wanted. But the most important part is that the moms loved it.

    It was a few degrees done for my tastes but the crowd is medium so there were no complaints.
