Chicken WonTons - Thigh Edition.

Since @cazzy says something like he that wants to participate in the summer spice exchange should at least post a cook here goes:

someone on on this forum mentioned WonTons the other day and that gave me an idea.  Combine the scraping of the skin that we do for cupcake chicken with grinding up the thigh meat and wrapping in the skin. 

First i I scraped the fat off the skin

then I seasoned the thigh meat and ground it up

wrapped in the skin and used toothpicks to hold it together 

cooked at 350 til it hit 155 degrees and sauced I some local Garland Jacks Brown Sugar Sauce

pulled at 170 degrees


turned out really nice. Next time I think I'll add chives, diced celery and chopped walnuts.

Fyi. 3 thigh pieces yielded enough for the 4 skins.
