Sunday Dinner; game hens

Beautiful day in GA. Too nice to cook in the house. Fired up the egg and started by roasting a butternut squash. Stuffed with chopped bacon, onion, roasted red pepper, garlic, S&P. The bacon was some shoulder bacon I made a few weeks ago. Started it an hour before the rest of dinner.

Here's the squash on the egg.


When it was done, I removed it and covered it to keep warm. Then some crispy skillet potatoes and a couple spatchcocked games hens. Simple herb, S&P on the birds. Then on the egg at 450 until done.



While this cooked, I mashed the squash with the bacon, onion, pepper mixture. Added some chunks of brie while it was still warm.

And finally on the plate.
