Stuffed meatloaf

decided to try a stuffed meatloaf today. 2# of 80/20, Swiss cheese and mushrooms.  Cooked it at 375-400 for about 40min, then glazed with  molasses ketchup mustard and a little apple vinegar.   Family really liked it. I may try this again.

    @henapple a meatloaf throw down for this month maybe fun.  It's something everyone could do and be creative with.  What do you think.

    Haven't heard what the winner of the last Throwdown @shucker has decided for the next Throwdown.  Hopefully it doesn't fall during the GA Mtn Fest.

    Is that it, meat, cheese, & shrooms?

    Just wondering because I am used to meatloafs having some filler (bread crumbs, oatmeal, or something starchy) and having eggs as a binder and then some form of seasonings, herbs, etc.

    And was the cheese mixed in, or did it just kinda melt in, because your sliced picture it looks like a layer of mushrooms surrounded by meat.

    Just trying to get a better understanding of exactly how you made this.

    @Zmokin no I used a small amount of potato flakes, an egg and some garlic, onion and some of our beef rub.  The cheese and mushrooms were in the middle, cheese basically melted in because I shredded it.

    @NPHuskerFL thanks.  I'd love to try to get in next months throw down.  As long as I'm around to cook. I like the idea of people stepping outside the box and trying new things.

    @SmokingPiney its definitely worth throwing something together. I basically was in the mood for a mushroom Swiss burger and desired to try to make it a  meatloaf.  My wife and daughter liked it so now it's time to see what else I can come up with.  They've thrown around the idea of hot wings, so we see it we can do so thing along those lines with blue cheese and buffalo glaze.  Idk time will tell

    OK, thanks for clarifying.

    Hmm, potato flakes, I might have to try that.  Oatmeal has been my "go to" filler for years now, but I never had thought of instant mashed tater flakes as a filler.  I tried crushed cheerios once, wasn't bad, but more work crushing them than pouring in some quick quaker oats.

     Instant mashed potatoes or what my grandmother used, always said we were meat and potatoes family lol, but it works well.

    Does it have to be stuffed? and will this be an online throw-down if it happens? I have a really good meat loaf recipe that I've always slow smoked on a smoker. It would be cool to Egg it and I can tell my wife its a contest.  :)

    Not that she dislikes the smoked meat loaf...
