have a 4 pound tenderloin....will do reverse sear....approximately how long will it take to get the meat to 110 at 250 indirect?

    Can tell you for  a 6 lb tenderloin . Tie tail to tenderloin so it is as consistent width as possible. Mickeys Rub about 1.5 hr before it goes on. Egg indirect at 275-300 with Jack Daniels Oak chips. About 1-1,5 hours cook time to IT of 120 degrees. Take off and tent . Get egg to 500-550 to sear on cast iron grid on spider. Sear about 2 mins per side. Let rest 5-10 minutes and slice 1/2 inch pieces. Perfect. Most tender beef I have ever eaten!
