I wanted to give a shout out to @MeatChurch and their Holy Cow BBQ Rub, I reverse seared some NY Strips with a generous portion of Holy Cow on there and was one of the best steaks I've had in a long while, I definitely recommend to everyone....

I have a cast iron plate that I set on top of the fire ring, I get the CI up to about 700* and the sound it makes when you drop them on is beautiful..
