Grilled Mahi Taco Extravaganza
ok, not really an extravaganza, just thinking about @johnkitchens upcoming epic rib cook this weekend
to the tacos:
Mahi Mahi filet rubbed with this:
Grilled up some jalapeños then grilled the fish at 450.
Dressed the tacos with some lime chile cabbage slaw, guacamole, mango pico, grilled jalapeño, crumbled cotija cheese and some homemade sauce. Very nice, we ate til we could eat no more.

@NPHuskerFL I just toss them on a cooler section of the grill and let them cook slowly, rotating every so often. When they collapse, I take them off, squeeze some fresh lime juice on them, sprinkle a little kosher salt and let them sit for a few minutes. They're great to eat whole or slice up and add to stuff like these. I don't take the skin off or anything, just keep it simple.Love you bro! -

the white sauce is something my wife whips up - usually a greek yogurt or crema base with some lime juice, chili powder, garlic powder, cumin and other stuff that I'm not really sure of. it's a little bit different every time, just makes it to taste.
