Skirt Steak Recipe on the Egg? Need a How To!

What's up everyone...

My wife loves Skirt Steak and I've searched all over the web on how to make one of the green egg.

Does anyone have some experience they can share? I'm a novice and I need a detailed recipe to follow.

I find skirt steak and flank steak to be basically interchangeable. Here is a link to an old cook of mine where I marinated a flank steak and made a chimichurri sauce to top it of. It would work wonderfully with skirt steak as well.

I dont have a recipe per se, but I have done a couple very similar to ChillyWillis. Marinate for as long as you see fit, then hot and fast on grill about 450 or so until 125-130 for med rare.

Best one I have tried is VI's Kalbi beef recipe- I used the marinade on skirt and it was really outstanding. One of the better items I have made on the egg.

Remember to remove membrane and make sure to slice across the grain. I like to slice on an angle and really thin.

Egg as hot as you can get it, and steak as close to the coals as you can.
