Bacon, buffalo & emmental "sushi" rolls...

I found an interesting video on Facebook a few weeks ago, and I wanted to try it.

Take a sushi mat. Lay down several strips of bacon, side-by-side, with no gaps. Lay down a thin layer of ground meat (I went with buffalo) with some rub mixed in. Place some emmental-ish cheese along the center, and then roll it all up as you would sushi.

25 minutes indirect at 350 degrees, then glaze with BBQ sauce, then another 10 minutes at 350. When they're pulled, roll them in crushed fried onions. Cut into 1" pieces... easy! They turned out great. I'll be doing this again.
