Is it ok to refreeze thawed ribs?

I bought three racks of ribs yesterday for today's cook. One rack was not frozen, but the other two were frozen. I put all three packs in the fridge yesterday afternoon so they would thaw and be ready for today. 

Something came up, and I couldn't egg. It will be next Sunday before I can egg them. They expire on May 1 so my question is can I refreeze the two that thawed? 

I hope so.

    Two considerations, safety and quality. From a food safety standpoint, you are fine. From a quality standpoint, repeated freeze-thaw cycles impact quality.

    That said, your ribs do not "expire" on May 1st. That is their best buy or sell by date. I would put them in the back of the fridge and cook them on Sunday.

    Yes, you can re-freeze them.  while thawing and re-freezing isn't the greatest thing to do, it isn't as bad as freezing for a long time with air in the bag so freezer burn develops.  Freezing never re-sets the clock for how long they can sit before cooking, it just stops the clock.  so if they are safe for a week un-cooked in the fridge, you can freeze and thaw and freeze and thaw  as many times as you like until they have spent a total of one week thawed.  So if you feel safer re-freezing until next weekend, do so.

    Agree @DMW texture and flavor would suffer.  Refrigerate and roll with them next weekend. I've had to do the same with butts, ribs etc.

    As previously said.  refreeze or place back into frig would work for me.  Have done both over the years without any problems.

    If they are vac packed you have nothing to worry about letting them stay in the fridge.  Even if not, a few days past the sell by date isn't a problem.  Of course, always go by the eyeball and nose test.
