Local Pork Belly
Smoking a local pork belly that I have been curing about 8 days. Using Ruhlman's maple recipe.

Using hickory and peach wood. Once you start making your own it's hard to go back to store bought!

This was the first using my slicer, it's not too hard to use a knife instead, but the uniform cut of the slicer was nice. I also smoke my own hams and turkey breast and vac. seal for lunch meat.
