Pork loin back ribs and no kitchen-cleanup meal!

Three and a half pounds of ribs, rubbed with Penzey's Spices BBQ 3001 and allowed to rest a while, smoked 5 hours at 230-ish, threw on the Hasselback potatoes, some corn-in-the-husk and some bacon-wrapped jalapeno poppers at the last hour while saucing.  I love not having to heat up my kitchen as the days get longer and warmer.  What are your favorite all-on-the-egg meals?
