Sunday Poultry Day

Had the egg going most of yesterday doing a couple simple poultry dishes; first was a turkey breast that got cubed up and will go on lunch salads this week.

I kept it simple and just used herb salt and pepper, and roasted it indirect at about 330, until IT hit 161, then I pulled and tented before I got around to slicing.  Pics will be in whatever order the forum thinks is good.

Then for dinner we did basic roast chicken.  Again herb salt and pepper, stuffed with a lemon that had been quartered and a couple of sprigs of fresh rosemary.

After I pulled the turkey I opened the vents to bring the egg up to 400 and put in the CI skillet to preheat.  That took about 15 minutes, and then dropped the chicken in, with the legs facing the back of the egg.  Pulled when I got a breast IT of 165, and served with rosemary roasted potatoes and grilled romaine salad.

Looks like a great cook. I love simple rubs like salt and pepper on poultry.
