Peruvian Grilled Chicken and Green Sauce

Rediscovered this recipe I had really liked in the past. Cooked raised direct. 


The green sauce (which I messed up tonight, wasn't paying attention to proportions):

  • 3 whole jalapeño chiles, roughly chopped (see note above)
  • 1 tablespoon aji amarillo pepper paste (see note above)
  • 1 cup fresh cilantro leaves
  • 2 medium cloves garlic
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 teaspoons fresh juice from 1 lime
  • 1 teaspoon distilled white vinegar
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons extra virgin olive oil
The marinade:
  • 2 tablespoons ground cumin
  • 2 tablespoons paprika
  • 1 teaspoon freshly ground black pepper
  • 3 medium cloves garlic, minced (about 1 tablespoon)
  • 2 tablespoons white vinegar
  • 2 tablespoons vegetable or canola oil

LBGE & SBGE.  Central Texas.

    I know that had to be some good eats.  I've done Peruvian chicken a few times and really like the flavors.
