Kale, coleslaw mix, cherry tomatoes, avocado, mango, pineapple, pomegranate seeds, drizzled with garlic infused extra virgin olive oil and aged traditional balsamic vinegar
Scallops are seasoned with sea salt, grind black peppercorn, rosemary, garlic powder, onion powder and paprika. Heat up coconut oil in cast iron pan and cook 1/3 cup of diced onion until golden. Then cook seasoned scallops until it is no longer transparent looking. Don't over cook because scallops can become a rubbery texture.

At what temp are using the coconut oil with the scallops in the CI pan? Love some fresh sea scallops but, coconut oil has a very low melting point and combustion at around 600℉ doesn't seem to be the ideal.
