Greetings-

For Easter (I know, a little behind the times, but still...) SWMBO requested a Big Green Egg Easter brunch so I did cinnamon rolls and bacon on the Egg, both at 400° indirect. Then later that day after resetting things I did reverse sear steaks for dinner. Pretty fun day of Egging! Looking forward to doing it again soon,

    I use it every time I do reverse sear. With it sitting on the grate I can preheat the grate while roasting the steaks. It also put the steaks higher up in the dome which I think gets them to 115°ish internal a little bit quicker. I do try to leave an air gap between the edge of the half moon and the lower part of the ceramic to allow air to circulate to that side of the fire.
