Jamaican Dinner

i just put a spatchcock chicken with jerk sauce we got while in Jamaica on the egg. I'm gonna make sweet plantains and tropical rice with it.  Let's hope it's good!  More pics to come.

    Reading your post, and not scrolling down, I was going to ask you for your tropical rice recipe.

    Then I saw the box :disappointed:

    I'm a little surprised how many times I've found cooks on this forum, where all the work is into the entree' from the egg and it is served with a side dish from a BOX.
    Large BGE in a Sole' Gourmet Table
    Using the Black Cast Iron grill, Plate Setter,
     and a BBQ Guru temp controller.

    Medium BGE in custom modified off-road nest.
    Black Cast Iron grill, Plate Setter, and a Party-Q temp controller.

    Location: somewhere West of the Mason-Dixon Line

    @Zmokin - I've never been good at making tasty rice.  Just about everything else I'll give it a home made go. 

    The he chicken was good, but the skin was a bit chewy.  I need to leave it in the fridge for 2 days next time, not just 1. The plantains sucked! They were dry and had almost no flavor at all... I guess fried plantains next time.  overall, a half way decent dinner I suppose.

    That wing looks mighty tasty.

    You know what, @Monaarts?  The best grillers I know are just as self-critical as you seem to be.

    I'd be willing to bet that your next effort will please even you.

    (I have a couple of buddies who constantly brag about their BBQ prowess.  We smile and mumble niceties as they boast.  No point in bursting bubbles, we figure.)

    Hell, I haven't cooked in days. Baseball is picking up. Is love some boxed rice and a wing. Beats a sammich!  Looks great.

  • For that preparation of plantain, you'll want to go with one that is yellow, not green. Green plantains are awesome for tostones, but will be too dry, as you pointed out, for sometime like sweet plantains. Love the idea of doing them on the foil in the egg though!
