Fellow Eggheads,

I'm looking to cook ribs a different way than what I have been doing, can someone give me any insight on how to make these "babies" fall off the bone?! Please and Thanks!

3.2.1 method works well for fall off the bone ribs. I personally like then to stick on the bone a little so I do a 2.2 method and have had good success.

What kind of ribs?  What are you doing now?

Assuming pork ribs, foiling for extended periods will generally make them fall off the bone (it basically steams them in the foil).  I (and many other here) actually prefer ribs to have a little pull to them.  Generally I don't foil at all, and I really like the results.

Baby backs 2-2-1.  2 hours uncovered 1-2 hours foiled 1 hour uncovered.  You have to play with the foiling time depending on the thickness of the ribs.

I like a little bite. Baby Back Turbo Ribs (No flip)
    350 indirect for 1hr 40 min.
Before cooking: Pull membrane , rub, mustard, rub.
Put on at 350 and leave the hell alone for about that time. This is called turbo ribs and I will never go back to 4 and 5 hour ribs.
Note: with or w/o mustard works .. I like Bad Byron's Butt Rub / I like cherry & pecan mix for wood.
If you want sauce: opened 15 min early and sauce. I like the sauce on the table.

I will try all three of these methods. Usually I boil for 10-20 mins prior to egg and then just smoke at like 200-250 for 3 hours and then wrap in foil and put them in a cooler (no ice obviously) for approximately 3-45 mins, unwrap sauce then grub time and theyre usually pretty good, no fall immediately off the bone but a slight pull. Thanks everyone!

350 and indirect for turbo ribs? It looks like from this picture it is raised direct? I think I'd like to try out turbo ribs but just curious if you are doing indirect or direct. Thanks.
