Pork Roulade

I made a pork roulade for dinner yesterday and it turned out really well.

i browned some butter and sautéed garlic, sweet peppers, spinach, Spanish chorizo and oregano.



Next, I butterfied 2 tenderloins and pounded them out to 1/2 inches.



I then intermixed wedges of fresh mozzarella with the stuffing and prepped it for rolling.



I mi forgot to take cooking shots, but I seasoned it with Secret Weapon rub and smoked it over cherry, going at 250 for 30 minutes and then ramping up to 375 until the meat hit 140.
