Easter Afternoon Snack: Ribs and a Beer

The wife and I are spending Easter at home this year so I decided to do a bit of yardwork to take advantage of the relatively warm day. The egg was looking really lonely though so I fired it up with a full load of Fogo lump and some cherry chunks (thanks Home Depot for the big bag of cherry chunks for only $5) to do an afternoon snack. After it settled in at 275F, I put a small rack of pork ribs on there liberally rubbed with DP Jamaican Firewalk (love it). After a good 2.5 hours indirect and pretty high in the dome, I gave it a light brushing with some Ray Ray's BBQ sauce (got this in an exchange on another forum - from the Ozarks - sweet, but a good complement to the firewalk heat). At just over 3 hours, they passed the bend test (just passed - how I like 'em). The wife isn't a huge rib fan, but she loved the flavor. I loved the flavor, the color, and the texture. On yeah!

The beer, unpictured, is a Cisco Brewers Grey Lady Ale, out of Nantucket. It's great.
