And The Easter Butt Begins!

I just put on 2 pork Butta to smoke over night for Easter Sunday. One of them I cured like hum and the other is for pulled pork. With some maple wood chips and waiting for it to stabilize before going to bed. The 2 weigh in at 20 pounds before cooking. More photos to come.

Thank you. That would be a nice counter top for your egg. I am fighting to keep the temp at 225. I think I have to many small pieces of lump maybe. Is it wanting to climb or fall? And if thats the same color I think it will look great with the egg. I also have some rough cut black cherry lumber I'm gonna plane off and cap my table. Try to dress it up a bit.

It was dropping, but I may have it locked in from 235 to 245. Soil see. I think it may be time to get a pit controller. And Im having one of my insomniac nights so I guess I'll be along for the ride for a while. Wife started working weekend nights so shes gone and sleeps all day. Guess I just have hard time sleeping without her. Can't let my boys sleep with me cuz they kick me like a couple mules all night.

Guess I will be FTC'ING tell 5 for dinner. I guess I could have started the butts this morning and had them done. I've pulled the one for ham, but left the one on for pork butt to get a little more done in places.

Well the ham button was a big success. Thirteen adults and 2 kids hit both the ham and pulled pork hard. Everyone took leftovers with them. I well be doing this again.
