Butt in a pan of apple juice

is it ok to put the butt in a pan of apple juice? Never tried this, my wife wants me too. Or should I put below the butt on the plate stter

    Not too sure I would put the meat in the juice.  If you really wanna use it put it below the meat on the plate stter.
  • You'll get sweet, boiled, pork if it's sitting in the juice. Or, if you're not careful, the juice will evaporate and your pork will sit and might burn in the puddle of burnt sugary fat. Put watered juice (pure juice might burn) in the drip pan below the rack, and put the butt on the rack above.
  • well, it won't boil.  and it won't steam very much either, so no benefit of braising (which is one way to break down tough meat).

    it won't flavor the meat other than by the meat sitting in it.

    no need for liquid in the drip pan...

    can' think of a logical reason for it, to be honest.  at dome temps, you don't really have a braising situation, just meat sitting in a pond of juice.

    better to use the juice in a sauce later.

  • I would just inject a lot of apple juice into it. You will definitely taste it that way. And won't end up with the crazy fat bath boiled butt thing.
