@Tinyfish yes it can be too hot! Last night I lost track of time and when I went to start the cook my thermo was 700 and the wok was close to 900 degrees according to my IR thermo. I thought I'd give it a shot. Cashews immediately became char.
Took the wok out, closed the vents, wait a few. Wok back on @ 500 and good to go. -
