@Tinyfish yes it can be too hot! Last night I lost track of time and when I went to start the cook my thermo was 700 and the wok was close to 900 degrees according to my IR thermo. I thought I'd give it a shot. Cashews immediately became char.
Took the wok out, closed the vents, wait a few. Wok back on @ 500 and good to go. -
I think it can be. I will usually let the egg get to around 550 and then put the wok on. It doesn't take long for the wok to heat up. I will typically close the bottom vent or not wide open while woking though.Tinyfish said:Silly question but can the fire be to hot when woking? Do you limit the amount of charcoal you put in or the length of time the charcoal heats up.
Once the oil is smoking and dancing it's time to wok.------------------------------

Yep, first time I would shot the oil in and it burst into flames, glad it was outside or I would've needed new cupboards.theyolksonyou said:@Tinyfish yes it can be too hot! Need to invest in one of these I guess. I try to stay outside with the egg once the Egg gets up to temp.theyolksonyou said:@Tinyfish yes it can be too hot! Grace Young is on PBS right now, breaking in a wok and going to make some recipes later, if you're couch-potating right now.

Heh, Matt, Ms. Young is using the same spatula you did, she claimed that this style:

are hard to find in this country with any quality (she got hers in Hong Kong). I have one from The Wok Shop and I think it's fine...“All you need in this life is ignorance and confidence, and then success is sure.”
