Pastrami Day

Smoking a pastrami today. Stalled out at 151º/152º from 11:30am to a little after 2pm. Now up to 160º. Hoping it finishes before the thunderstorms hit later today.

    Just a suggestion..finish it in a pressure cooker..10 PSI for half an hour once you're past 150.  (That's what I did on St. Paddys day and am doing on this one).

    UNBELIEVABLY good!!

    The plan for this one is to smoke it on the egg, cool it, and steam before serving. Generally following the Amazing Ribs instructions.

    Finished smoking right at dinner time. Looks good. Wrapped in foil and is now in the frig. Plan to steam it for tomorrow's dinner. Now have to decide on the sides.

    Looks fantastic! Your plan is great. Steaming is vital. Enjoy!
