Cooked up some ribeyes today. I put a dry rub on them 4 days ago and put them in some food saver bags.
Brown sugar, salt, onion powder, garlic powder, and cayenne. They turned out great. -

That is after the 4 days. It pulls a lot of liquid out. The steaks also get almost a brown instead of red. The fat takes on an amazing flavor.

So, how'd you cook em? Reverse sear, TRex, .... Inquiring minds want to know.

I started on a CI grate in my woo2 to sear then raised to finish off. I'll try a reverse seat next time. I just have to be careful because the brown sugar causes them to char easily. I would recommend you try it at least once. Gives a little different flavor than normal steaks and the fat is so good.
