    I'd echo the adjustable rig instead of plate setter. Other accessories I use almost every time I egg:  thermapen, 16 inch oxo tongs (great for flipping meat and re-arranging smoking wood and coal).

    My biggest mistake was using the starter cubes...  I'd recomment twisting up a paper towel, dipping it in vegetable oil, placing it on the charcoal, and then lite it.  It works MUCH better IMO.

    Thanks guys.. My shipment has been delayed so I'm still waiting for that bad boy to arrive. Can't wait!!! Lol.. Definitely going to start with ribs or something low and slow. I can't wait to share recipes and ideas with everyone.. I've got some awesome recipes

    Opening the egg  to spritz etc  tends to gradually increase your stable temp.   Open Infrequently.  Don't overcompensate  to keep temp stable.    I'm still ineggperienced tho so keep reading on this.   there's a phrase here "if ur looking, you aren't cooking

    Get a good set of heat resistant gloves to remove the plate setter or adjustable rig. Whichever you decide to go with. I'd go AR personally. Welding gloves have served me well for years and years. Except the last pair which got meat grease on them and the dog chewed the hell out of them. LOL Get a good thermometer. Save your money for now and spend it on meat, lump and wood chunks till you figure out what you really need.
