Pork Chops with Greens with Mustard Sauce and Pickled Shallot

The shallot was sliced and covered with a boiled mixture of salt, sugar, and vinegar; then added whole mustard seeds. The onions were great and I'll use them again with other dishes. 



The mustard greens were topped with a sauce dressing of Dijon mustard, honey and vinegar. 



The chops were cooked on my cast iron plancha.
