First Pizza - What do you do with left overs from your Steak Dinner - Pics included.

Several friends were coming over for dinner last night, this would be the first time I would be feeding guests off the egg and they wanted steaks. In the past SAMs club as been a pretty good place to purchase steaks - Good price and fairly consistent. The trip to SAMs club (kinda like Cosco for those who dont have SAMs): Shopping list, Inch to Inch 1/2 thick Fillets and Ribeyes, a couple of pounds of sea scallops, Asparagus, and while we were there we wanted to get "stuff for Pizza" for the next day. The "stuff for Pizza" turned into buying 2 of the "Take and Bake" plain cheese pizzas. We figured we would just doctor them up and put them on the egg.
I wont waist time on the steaks... They were a bit of a disappointment. I think meat quality was the issue. The fillets were yummy, the ribeyes were OK. Veggies and asparagus were really good. Threw on a few sea scallops for surf and turf - they were GONE. We did have lots of left over grilled fillet and asparagus. On to pizzas....
Fillet and Asparagus Pizzas:
Loaded and lit the Egg. - PS Legs down, SS grate on top of the PS. - Let it stabilize around 650 for about 10-15 minutes. Clear smoke.
While the egg was stabilizing I took out the "Take and Bake" Cheese Pizzas,
Thinly sliced the left over Fillet and cut the asparagus in mouth-sized morsels. Added these to the top of the Pizza, Added some fresh Romano cheese and a bit of Parmesan.
Placed the pizza on a pampered chief pizza stone. The pizza hung over abut a 1/2 inch (This is BAD - next time I will trim the pizza to assure NOTHING hangs over)
Put the Pizza on the egg - shut the lid - Waited about 7 minutes before opening.
When I opened it the outsides edges were charred. (Everything that was hanging over)
After seeing the charred crust - I thought I had to get it off ASAP.
Took it off and cut away the charred bits. WOW It was fantastic but the center could stand a bit more cooking. So I decided to get the center right by heating individual pieces about 3 or 4 at a time. Worked perfect... I love pizza by the slice!! All and All... I think we will always have a few "Take and Bakes" in the fridge with lots of stuff to doctor them up with. I think we are also going to try our hand at homemade dough -- but the take and bakes are very convenient and were fantastic!!!
Cheers, Thanks for looking!!
