beef ribs

These were not done the way I would have liked because I was rushed.  My dog had knee surgery yesterday and we picked her up today so I couldn't pay much attention to the ribs.  Plus I had a time limit because I am working nights.

Did indirect with Saskatchewan steak spice.  did a clean burn at the start because I had a lot if crud on the PS, then pinched everything in and got it to 500 deg.  Over two hours it dropped from 500 to 325.  Cooked another half hour and pulled them, they ended up being 175 IT.  would have like to go till they fell apart but ran out of time.

They tasted great just not fall off the bone.

  • All these beef ribs showing up on this site are going to have me paying a visit to my butcher ASAP. I need to get in on this action. 

    Sorry to to hear about your dog, hope it's nothing too serious.

    She had a TPLO surgery which they cut her tibia, raise it up and then put in a plate. This is so she no longer needs the ligaments between the tibia and femur which were torn.

     Its going to be a long road to recovery, 16 weeks of no stairs, running or play and we live in a bilevel.  We put a gravel tray on the deck hoping she will do her business there.
