@Theophan. I actually started this thread last year March 2015 and then tacked on my April 1 2016 tomahawk cook. The one sliced this year was pulled with an IT of approx 125. Cooked indirect for just over an hour at 275. I then waited a good 20 mins while we prepped sides and stuff and then back on direct. The one without the bone was for my wife who prefers medium. I let that go to 135 or so. We have leftovers too so all good. Pat Lafrieda. Saw the show Meat Men a couple of years ago and gave them a try. Rib roasts, steaks, burgers,sausage, etc. all been good. No sure if show is still running. It was good at first but then got old for us.
