Stoker cooks I haven't tried, Ideas?

Ok, I've done pastrami, brisket, and a Egret's Ham. Besides pulled pork anyone have out of the box  ideas for a cook that would require the Stoker? I won't use it above 325* unless going for the finish.

will it hold temps low enough for jerky, say 145 dome

Smoked cheese or Bacon. Or jerky like @fishlessman suggested.
