Stoker cooks I haven't tried, Ideas?

Ok, I've done pastrami, brisket, and a Egret's Ham. Besides pulled pork anyone have out of the box ideas for a cook that would require the Stoker? I won't use it above 325* unless going for the finish.
I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.
