Pulled Pork Leftovers: Still Yummmmm...

I tapped into a cache of food saver'ed / frozen pulled pork that came off the egg last month and whipped up some pulled pork nachos (my favorite) and tried my hand at pork stuffed bell peppers with brown rice and black beans. Peppers were fantastic - another goto leftover meal for me and I would highly recommend to any / all here. Just cut peppers in half, clean seeds and membrane, stuff with warmed pulled pork cut with a little BBQ / brown rice / canned black beans (rinsed and drained), put in foil covered baking dish with a splash of water at the bottom for steam, bake at 350 for 30 minutes, then bump to 450 and remove foil for another 10 or so. Top with cheese would be my only addition for next time. Did'nt miss it a whole lot this time around though.
Nachos looks slightly anemic in this pic, once I added salsa, corn relish, and guac it didn't last long enough to be photographed.
Wife paid me another nice compliment tonight: "Ever after being frozen for a month, pulled, thawed, and thrown in a leftover dish - this is STILL the best pulled pork I have ever had from anyone / anywhere"

Those peppers look great and pulled pork nachos are always a hit. Pass the sour cream and the hot sauce.
That's a great compliment from the wife. My freezer reserves have been depleted so it is time for me to restock.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
