Thanks for all the advice on preparing and cooking this. I began by trimming the fat and salting about 2 hours. Dizzy Pig Cow Lick was my choice of seasoning just before putting on Egg. Egg was running around 275 until the roast hit 125. I removed the plate setter and brought temp to around 600 to reverse sear for a couple minutes per side. I could have probably pulled a little earlier but it was outstanding.

Very nicely done, glad you were able to do the whole thing as that's a good experience to have. Only thing I'd suggest if you want it a little more rare is to pull it at 115* instead of 125*. At 125* you are already at rare so anything on the sear is going to take you past it. Great cook and nice looking view from the backyard. Those pines remind me of the Carolina's and obviously being in VA you are pretty close.I raise my kids, cook and golf. When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.
