Cuban panini

With all this crazy weather I've been called into work the past two days.  This has seriously cut into my Egg and cooking time.  I did fire up some pork tenderloin on Monday and made enough to do some Cubans this week.  

Nothing fancy....just some pork, black forest ham, provolone, spicy mustard, and crispy pickles.  Throw on the hot press for a few minutes and dinner is served.

    A new place opened here a month or so ago, called The Corner Bakery Cafe.  My first visit, saw they did a lot of paninis, but was disappointed to see no Cubans.
    I "contact us!" them, email, and asked for a Cuban, and WTFOMGBBQ, last weekend they had a handwritten sign up, "Try our new Cuban!"  
    Wo0t!!  It was good, not great, but it was a Cuban!  Happy happy, great customer response!!

    They are a chain, we have one here locally.  I would not expect a good but not memorable Cuban from such a place.  At least they have one!

    My mother bought me one three years ago for a gift.  At the time I really didn't think much about it.  I'm not a big sandwich eater.  
    Then one day I decided to try something....
    lo and behold the clouds parted and the angels sang...Sweet baby Jesus, these were damdelicious!!!  I couldn't stop!!!  
    Next thing I know, I've got the thing sitting out on my counter 2-3 times a week. They are great for a dinner sammich and so easy!  I don't get off work til 7 so I love that I can come home and have a dinner in less than 20 minutes!

    I did mine in a CI griddle from Wally World with a wrapped fire brick on top. Only got the marks on bottom, but did the trick.

    I use 2 12-inch cast iron skillets.  Preheat both on the stove, put the sandwich in one and put the other on top to push down.  You don't get grill marks, but you get nicely pressed sandwiches and a hard toast on each outside of bread.

    Sounded and looked so good, especially the corn, that I meant to try it. Somehow still haven't. Maybe yours will be the inspiration. Looks great!!
