Throw Down Pull Out -- Hot Ham & Tasso Ham Appetizer

Made this appetizer for the surf 'n turf throw down as an appetizer before we got into the pulled pork.  It's an egg-take on an old standard appie that we all love here in The 302.  Used Savoie tasso ham, which you can't get here but the internets had delivered to me for our mardi gras party.  Aside from that, it's a pretty simple prep:  make a paste out of clam juice and Ritz crackers; saute vidalia onion; add garlic, lemon juice, red pepper flakes; add minced/chopped clams; combine together with grated, aged sharp provolone and grated parmesean; top with more cheese and egg til it's bubbly.  Serve with pita or veggies or a spoon (NO FORK!) -- this stuff goes quick.

Not going to win any throw down awards, but that's ok -- it's a good solid appetizer if you like this sort of thing.
