Saturday night cook

Wanted to share my Saturday night cook — started with some grilled cheese (literally) as my wife told me about halloumi cheese. Threw it on the BGE until toasty on the outside and melting in the middle. Very cool and very delicious. Felt like a high class fried cheese!



Main in course was grilled skirt steak with chimichurri sauce. Highly recommended! Had the BGE at about 600 and hit the steak about 3 minutes on either side. Had a little medium for the wife and a lot of medium rare for me. Wife roasted some tomatoes on the side to finish it off.
