Simple spatchcock and garlic rosemary roasted potatoes

Not a fancy cook, by any means, but at least I'm back to egging. :)

Lit the XL with the remaining fogo from my last beef rib cook. Put in a foiled ceramic stone for indirect. (My PS broke, and as I bought the egg as a demo at the PNW Eggfest directly from the distributor, I don't really have a "dealer", so not sure how to go about getting it replaced.) Foiled bricks on top of that for some spacing, then put on a pan of quartered baby gold potatoes that I'd sprinkled with kosher salt, pepper, some fresh rosemary, peeled garlic cloves, and some EVOO. Next rack was the chicken. Simple spatch, dried off, dusted with baking powder and Greek seasoning. 15 minutes skin side down and then the flip. Ran at about 375 until the chicken read 140 in the thigh. Took off the taters, which were nice and soft but not as browned with yummy goodness as I wanted. Opened up the egg to let the chicken finish cooking while crimping the skin. Finished the taters under the convection broiler for a few minutes. Decided the rosemary could count as the veggie for the night. :) 

The chicken turned out amazing...always pleasantly surprised with just how juicy it stays. Skin was nice and crisp. But the potatoes - oh, the potatoes! They were amazing! My oldest had three helpings! Definitely a do-over.

Pics aren't pretty to look at. I'm not one for artistic plating, it was dark, and it's my iPad. But hey, at least you know it happened. :) thanks for looking. :)

    Bought mine from the same fest. I imagine you find a dealer and show them the receipt, should get a replacement. If there's a problem call the distributor but they service the dealers all over WA so it should be easy.

    Looks like yoh brought it home and cooked up in a pan so speak ;). Pics or no pics... 3 helpings is a pretty good indication of greatness. Nice work.

    The food looks great. I love potatoes basted in chicken fat! 

    You ahoukd be able to go to any dealer to handle a warranty claim.  It doesn't have to be the dealer you purchases your egg from. 


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.
