Prime Rib
Alright Egg Heads,[p]I want to thank everyone who helped out on the fish basket question I posted yesterday. It really helped.[p]Now I want some more eggspert advice on the subject of Prime Rib. I'm wanting to cook one this weekend on my BGE. I would like all of your opinions ranging from temperature, size of prime rib, spices, cooking times, etc... I will be cooking for probably 4 people at this point. We like our prime rib medium to medium rare, so I would also like the internal temperature for wellness to. Let's hear from eggsperts!!! [p]P.S. Don't forget to recommend the best cerveza's and wine for the ladies to go with this! [p]

here is a link to how i do mine. ...i've done lots of them this way, but you will get a lot of advice and different methods for prime rib. ..it is really an easy hunk of cow to get great egg results with. . .only key is to not over cook it ... . [p]as far as what to put on it? .. .whatever you like. . go with peppery rubs, lots of garlic, herbs like i do, or just simple salt and pepper. ...[p]bone in or bone out? . ..i prefer bone in, but you can go bone-out if you like ...i have no problem with carving a bone-in prime rib. ..[p]how much for 4 people? . . usually figure one bone for every two people. ..a 2 bone prime rib should be enough, but if i were you i'd go 3 bone. . .you can always use the leftovers for prime rib hash the next day.. ..[p]good luck and welcome to the cult. ..

Is this another gadget for the egg or is it something you built yourself? Is this something that will hold a drip pan or a pan of water for moisture?[p]Thanks again

a plate setter is a ceramic piece made by bge to fit in your egg and create an indirect heat barrier.. . it basically turns your bge into an oven. .. .great for roasting, baking, etc. . .you can get around it by using multiple grids and water pans, firbricks etc. between your fire. .. but if i were you, i'd be on the phone to bge this morning ordering one (they run around $35.00 plus shipping). .i probably use mine in 60 - 70% of my egg cooking. ...so basically, i'm 'roasting' the prime rib as opposed to grilling it directly.. ..

Here is a link to one I did a few years ago. Nothing much to it, as long as you don't overcook.

i like the end pieces, so i do 2 bone pieces. everyone gets an end piece. i like them trexed, seared, rested for about 35 minutes, and then roasted on a 325 raised grill direct. i cook them until they are about 123-127 internal and then rest them before cutting in half

Mine starts out rubbed in spices and what not's. Then its on the Egg indirect, at low temp (250 dome) till the thermo reads about 125. I pull it off and let it rest. I remove the indirect setup and fire the Egg up to sear temps, about 15 min. Now I sear it to my liking. The rest is dinner.

I did my first one this way as well. I think I seared for about 10 minutes - 5 per side.[p]I will try Max's way next time.
Either way it will be great.

Green Egg Apprentice, Scott Newbern just posted a set of recipes for prime rib. I say a 'set" because he includes the rub, the sauce and Yorkshire pudding.
