Apple & Raisin Stuff Bacon Wrapped Pork Loin

Allrighty folks.  I finally made a stuffed pork loin tonight.

Here's the recipe:

4 - 4.5 lb pork loin
Kroger brand chicken stuffing mix
1 cup chicken broth
3/4 cup water
1/2 cup apple juice
1/2 stick butter
1 TBS of brown sugar
1 green apple peeled and cored and diced
1/2 of a large sweet onion diced
3 med cloves of garlic
1 cup of raisins

Combine the everything into a large pot EXCEPT the stuffing.
Bring to a boil
Cook for a few minutes to soften.
Add stuffing and follow directions on box

Filet the pork loin and lay flat
cut off all fat
lightly salt

After stuffing has cooled down, add to pork.

Roll up and tie with butcher's string.

Wrap in delicious bacon

Cook indirect with water pan underneath

This one took about 1 hour and 45 min.  Dome temp was 375 - 400....grill temp was around 325.

I pulled at 145 temp at thickest part.  lightly tented with foil and let rest for 10 min.
