One of the first things I cooked on the BGE was a spatchcocked chicken. It turned out great. Then, this weekend, I did a 12 lb. turkey using one of those wire tube things (325 dome for about 5 hours). Again, very good. While waiting for the turkey to cook I got to thinking "Can a turkey be spatchcocked?" Would you even want to try? Pro's and con's of doing this. Has anyone done it? Is it worth doing? Enquiring minds want to know.

Char-Woody,[p]That's all the encouragement I need. I'm trying it is as soon as I get rid of the current turkey left overs. Thanks for the feedback.
