I'm cooking to big butts for work tommorrow. I'm planning on putting them on this evening and hoping they will be done around 7 to be FTC'd. What temp should I set my alerts for the grill temp on the maverick? I was thinking 240-280? Hopefully that will let me get a decent nights sleep tonight, and the butts will be ready in the am with only having to get up a time or two.

What's your target temp? I usually go 270 ish with a +- 50. Give it an hour after you put the meat on to stabalize before you sack out.

I set the grill tem alerts at 240 and 280, and the meat temp at 195.
