First buy a Mini or Mini-Max.
Turbo Beef Ribs on Mini
Indirect 350. Pull membrane, Rub-mustard-rub, cherry wood. Used coffee rub.

Another option is to run at around 250*F on the dome for around 5-6 hours. Some foil after about 3 hrs-I prefer to go nekked til the finish-line. Best indicator is the toothpick test.

Last time I did these I kept it really simple:Salt and pepperon the egg around 250-275 for 5-6 hoursglazed with a bbq sauce thinned out with Worcestershire sauce....they were the best I have done yet.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

I too picked up 2 packs at Publix on Sunday and used this recipe:Best tasting ribs I've made in a long time ... lent started for me on Monday, so this was my last meat meal for the next 50 days .. very satisfied :-)LBGE & MiniOrlando, FL
