Salsa on the egg

Hi everyone, decided to make some tomatillo salsa. To make it I combine tomatillos, onion, and jalapeño peppers. I grill them until everything is soft, usually 20 to 40 minutes depending on temp. I have this cast iron pan I use so the onions and peppers don't fall through the grate.

I then put them in the food processor with some salt and olive oil to taste. Then serve and enjoy. imageimageimage

    Please come to the Salado EggFest and bring the salsa. And some chips. Yep, chips would be nice with the salsa.
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.

    @mickey I hope I can come to eggfest. I may be in Algeria for work but if I'm not I will be there!

    Looks good. Never even had a tomatillo though. Been on my list for a while. Mango is the only salsa I've actually made... My kinda food, tastes great and no cooking required! :)

    I hate it when I go to the kitchen for food and all I find are ingredients!

    Looks good - I do almost the same thing, usually add some fresh cilantro to the blender and maybe 1/2 avocado if I want it creamy - also helps balance the heat if I get carried away with the Serranos. Love the way the tomatillos get a good smokey char on CI!

    @TylerA that looks delicious! Any recommendations on number of tomatillos, onions or jalapeños? We love some tomatillo salsa but never made it at home.

    Do you peel the skin off the peppers before processing?

    @walt2015. I usually use 10 or so tomatillos and a half a large onion. I use 3 jalapeños with the stems removed. I usually add 2 and if it needs more I add it.
    @EGGjlmh. I leave the skin on.

    i made the exact same salsa last weekend.  i also add a handfull of cilantro to mine as well

    spatch a chicken, shred it, roll the chicken in some tortillas, pour the tomatillo salsa over them with some creme freshe or sour cream, throw on the bge at 300ish for 45 mins, toss some shredded monterey jack on at the end and you have yourself some insane enchiladas

    That sounds Great @Tonyled, I think I may have to do that next time I make the salsa  We put it over the pork but in the first picture it was great.  I also like it on eggs.
